I was the smallest among my friends, and the smallest kid in all my classes. My parents were concerned that I was not growing. At seven years old, my parents took me to the doctor to get some tests done. After a trip to the hospital for an Endoscopy, I was diagnosed with Celiac Disease. Before this, my parents and I had never even heard of the disease. Right away, we set to researching what I was allowed to eat: however, everything tasted horrible.
Not only was the food bad, but I was left out of so many social activities. At birthday parties, I could not eat the pizza or cake. At lunch in the cafeteria, I could not buy the hamburgers everyone else was having - I had to bring my lunch from home. While I was privileged enough to have lunch to begin with, I selfishly wanted to have what my friends were enjoying - I do not think this makes me atypical in any way.
However, my parents and I eventually became aware of decent options flooding the market. I began to find the right gluten-free food - suddenly buffalo wings, honey chicken and rice, dense bagels, and fried rice became viable options. Suddenly, gluten-free seemed to be all the rage. I had to get the word out.
Seven years after my diagnosis, I started my instagram blog “@glutenfreebyava;” I wanted to show others in my community that they could still eat amazing foods while maintaining a proper diet. To do so, I find and share delicious recipes and safe restaurants for them to enjoy. My blog soon gathered hundreds of followers and has not slowed since.
My journey was long, exhausting, and overwhelming. Having some support along the way would have been immensely beneficial - a mentor who had gone through similar experiences, assistance at home and in everyday tasks like grocery shopping. I feel that it would have helped me, and my family, to take a deep breath.
Over the years, I have accumulated a wealth of knowledge on living successfully with Celiac Disease, so it only feels right to share what I have learned. I aim to be the person you can turn to with any question, no matter how silly, or daunting.
I want you to know that you are not alone on this journey. I am here to help guide you through the gluten-free world.
Gluten-free living should be fulfilling, not daunting. That’s why I focus on practicality and empowerment. I provide tailored guidance and resources to make gluten-free living accessible and enjoyable for everyone. I offer valuable straightforward strategies and easy-to-implement solutions to help you save time, effort, and resources.
